Spinach & Cherry Tomato Pasta
This pasta is an oldie but a goodie - it might be the very first recipe I ever came up with. I can remember watching cooking shows for hours after school and being so inspired by people like Giada De Laurentiis and Ina Garten — fun fact, I actually met Giada - she is the nicest! I came up with this recipe one day after school and it is still one of my favorites. I can vividly remember cooking this with my best friend Candace after lacrosse practice one night and it is one of my favorite memories. I have changed the recipe a bit since then, I elevated the range of flavors with some white wine and lots more garlic. It is a true italian pasta made with just a few fresh ingredients. It is simple yet hearty, with wholesome vegetables and of course finished with parmigiano cheese. It takes 15 minutes start to finish and is a perfect weeknight meal. Hope you enjoy!
what you need:
+ 1 lb penne pasta
+ 1 bag fresh spinach
+ 1-2 cups halved cherry tomatoes
+ garlic
+ 1/2 cup dry white wine
+ olive oil
+ freshly grated parmigiano cheese
what to do:
+ Boil a pot of salted water, cook pasta until al dente
+ In a pan, saute garlic in a couple tablespoons of olive oil. When garlic becomes fragrant, add halved cherry tomatoes.
+ Over medium heat, cook for a few minutes until the tomatoes begin to burst. Add spinach and cook until wilted.
+ Deglaze the pan with the white wine, simmer for a few minutes until reduced.
+ Strain pasta, add directly to pan and allow the dish to meld over low heat.
+ Serve and top with parmigiano cheese!
