Carne Asada Tacos
Tacos are one of my favorite things to make. They are so delicious, fun and different for any night of the week. Usually I just do the typical ground beef/taco seasoning situation, but I found carne asada meat at Trader Joe’s and knew I had to try it. It turned out to be amazing and so easy. This recipe takes maybe 15 minutes start to finish- depending on your toppings. For mine I did smashed avocado on the bottom of the tortilla (putting in on the bottom helps prevent everything from falling out!) and topped with pickled red onions, cotija cheese, lime juice and cilantro. I like to serve mine with brown rice on the side- I love TJ’s cooked, frozen rice for the convenience and its the perfect amount for the two of us and a little leftover. What you need:
+ 1 package carne asada meat (Trader Joes)
+ tortillas (I prefer the carb-savy ones from TJs)
+ chopped fresh cilantro
+ avocado
+ pickled red onion* see notes for recipe
+ cotija cheese
+ limes
What to do:
+ Sear meat in cast iron skillet or on the grill. Cook per directions on package.
+ Slice meat and set aside
+ Toast/grill tortillas to warm them
+ Spread smashed avocado on each tortilla
+ Add a few slices of meat to each tortilla
+ Top with pickled red onion, cotija cheese, cilantro and a squeeze of fresh lime
notes-
+ to make the pickled red onion, slice 1/2 of a red onion and place in a mason jar/air-tight container. Add 1 teaspoon honey/agave (whatever sweetener you prefer) and fill with any kind of vinegar until most of the onions are covered. I usually choose apple cider, but any vinegar will work. Add a pinch of salt/pepper. Cover and place in fridge for a couple of hours or ideally overnight!
